- Description
Tiger nuts are small roots, brownish in colour, round in shape and rough in texture; it could be said that its appearance is similar to that of a chickpea or a hazelnut, hence this species is commonly known as hazelnut sedge.
It has a slightly sweet and starchy taste, and although it can be eaten raw, tigernuts are often used to make beverages, the most popular example being tigernut milk drink (horchata de chufa). It is a sweet, milk-like drink, widely consumed in Spain. However, nowadays, other uses are emerging, not only in the kitchen but also in the industry; some examples are the elaboration of flours, peeled tigernuts snacks, beers, animal feed, cosmetics, among others.
